Recipe: Blarney Bird

Ingredients: Basic Stuff
1-3 to 5 lb. chicken
½ c lime juice
½ c ranch salad dressing

The Rub
1 tsp. Sea Salt
1 tsp. black pepper
1 tsp. garlic powder
1 c potato flakes

Liquid Flavor Essence
6 oz Irish whiskey
6 oz dark beer or
12 oz stout dark beer
Directions: Wash the bird and pat dry.

Pour lime juice inside the cavity, shake, drain.

Place bird on Tower, legs down.

Use a basting brush to paint the chicken with ranch dressing.

Coat the bird with the potato rub by rolling in a pan .

Add the beer/whiskey to the Flavor Base and place Tower and bird on the base.

Line the Tower base with new redskins and pearl onions.

Place in grill or oven and cook for 1 1/4 to 1 1/2 hrs or until drippings run clear.

Remove from heat, and let stand 5 minutes.

Serve with fresh greens and green beans spiced with dill. A dark beer washes it all down. Erin Go Braugh!
