Directions:

Wash the bird and pat dry. Pour lime juice inside the cavity, shake, drain. Place bird on Tower, legs down. Reserve 1/2 cup of liquid essence for basting. Use a basting brush to paint the bird with peanut oil and generously apply rub. Add the liquid essence to the Flavor Bawse and place Tower and bird on the base. Line the Tower base with sliced pineapple and bananas. Place in grill/oven and follow cooking directions. After 45 minutes, baste every 15 minutes. Remove from heat and let stand 5 minutes. Baste bird a final time and sprinkle coconut over bird.
Present bird garnished with the cooked fruit. Serve with a fresh fruit salad and a medley of sauteed snow peas, onions and bamboo shoots in white wine and peanut sauce.
